Every rally is a point, no matter who served. Games run to 15 or 21 depending on what you agreed before you started, and you have to win by two. A match is usually best of three games.
If you know volleyball from twenty years ago, forget the bit where only the serving team can score. Roundnet has never worked that way.

The rulebook is short about it: roundnet is played using rally scoring, and points can be won by the serving or the receiving team. So you win a rally, you get a point. There is no such thing as winning the right to serve.

This is why the serve is so heavy in this sport. A good server does not just start the point, he can win five or six of them in a row without anybody else touching the ball properly. In side-out scoring that would cost him nothing. Here it costs you the game.
Games are played to a number agreed before the start, typically 15 or 21. Recreational play is almost always 21. And you have to win by two, unless the format explicitly says otherwise.
The rulebook spells the tie out with its own examples. A game to 15 tied at 14-14 keeps going until someone leads by two, so it can finish 17-15. A game to 21 tied at 20-20 can finish 27-25. Nobody planned that evening, and those are the games people remember.
Agree the number before the first serve. Every argument about the score I have ever refereed by accident started with two people who thought they were playing to different totals.
A ceiling. It ends the game whatever the margin, and it exists because win-by-two has no upper limit and a tournament schedule does.
The tournament director sets it, and the rules require it to be announced before the games start. The example in the rulebook: a hard cap at 25 means that at 24-24 the next point wins. Sudden death, and everybody in the venue knows it.
You will not need this in the garden. You will need it the first weekend you enter a tournament, and it will be the moment you find out how you handle pressure.
A match is won by taking the designated number of games, typically two. So most of the time, best of three.
Tournaments vary this on purpose, and it is one of the levers an organiser has. A single game to 21 is brutally short: one bad start and there is no time to come back, which is exactly why it produces upsets. The 2024 World Championship in London used that format, and the results showed it.
So when someone tells you a format is unfair to the favourites, they are usually right. That is often the point.
The first serve is decided by a coin flip or one game of rock, paper, scissors. In bracket play with two games, the higher seed chooses first, and if a match goes to a third game there is another coin flip.
Positions matter here too. The four players set up 90 degrees apart and keep those positions for the whole match, so who serves to whom is fixed once the game starts. In the garden, nobody does any of this and it works fine.
